Ubi’s Tomato Soup Recipe

Soup and SandwichOur Tomato soup was made with several Ubi’s spice blends and ingredients. Loved by many, we are sharing the recipe so you can have this unique and wonderful flavor at home whenever the craving strikes! Modify and/or morph leftover soup into pasta sauce (the spread we used on our Pizzalicious grilled cheese) or for a Chili base. Yup, our Tomato soup was the base for our awesome Chili as well!

 

What we used:

  • 2 – 15 ounce canned organic tomates or you can boil fresh – 3 pounds tomatoes
  • 1 – 13.5 ounce can coconut milk
  • 1 – small-medium sweet onion
  • 1 TBSP Olive oil
  • 1.5 TBSP Ubi’s Veggie Mix
  • 1.5 TBSP Ubi’s dried Basil
  • 1.5 TBSP Ubi’s Garlic Blend
  • 1 Cup water
  • small saucepan with lid
  • Vitamix or blender
  • larger saucepan or lidded pot

How we put it together:

  1. Heat Olive Oil in stainless steel pot, medium-low heat
  2. Chop onion and add to pot to saute it
  3. When onion becomes almost clear, add Veggie Mix and 1 cup water
  4. Turn heat up to medium for 10 minutes then add all other Ubi’s Spices
  5. Stir up mixture and turn heat down to low and cover for an hour allowing the flavors to simmer and mingle together
  6. Open coconut milk and canned tomatoes
  7. Scoop half of onion mixture into Vitamix or blender, add 1 can of tomotoes and half the coconut milk and blend for 30 seconds or until smooth. Pour into larger pot and add the remaining ingredients into mixer. Blend and add to larger pot. Heat on Medium heat covered for 3 hours, stir occassionally.
