Make Ubi’s Grilled Cheese Sandwiches at Home!

Our gourmet grilled sandwiches were much loved by the community as well as by the staff of Ubi’s! As sad as we all are to see them go, it is quite a relief as Ubi’s was always first and foremost a retail store. Running a cafe and or restaraunt is a lot of work! With the extra space, time and energy we will be able to expand on our offerings to the community. I am very excited to be able to add many products and services over the next several months!

How to get our unique Gourmet Grilled Cheese flavour at home:

What you need:

  • Skillet – I use cast iron at home
  • olive oil
  • Sourdough bread
  • butter
  • cheese & Ubi’s spice
  • spatula
  • pastry brush

For Garli-Vardi – Creamy Havarti cheese + Ubi’s Garlic blend

For Moroccan Curry – Pepperjack cheese + Ubi’s Moroccan Curry spice blend

For Pizzalicious - Ubi’s Tomato Soup + Ubi’s Pizza Seasoning + Mozzerella cheese

For Apple Muenster – Muenster cheese + Ubi’s Apple Pie spice + Gala or Fuji apple

For Jalapeno Pepperjack – Pepperjack cheese + Ubi’s Mexican Seasoning + sliced Jalapenos

For Tomato Balsamic – Mozzerrella cheese + Ubi’s Mediterranean Seasoning + roma tomato + creamy balsamic dressing

Putting it together:

  1. heat skillet on medium
  2. butter the inside of both pieces of bread and generously sprinkle the spices onto the butter
  3. brush the skillet with olive oil – not too much, just enough to prevent sticking
  4. place one slice of bread, butter and spice side up in skillet
  5. add cheese to taste
  6. when cheese starts looking melty, lift the edge of the bread with spatula to see coloring of toasting bread. When desired coloring is almost achieved, add other slice of bread, butter and spice side down onto melting cheese
  7. brush a small amount of olive oil onto bread and flip over in the pan
  8. When other side is the desired color/toastiness – remove from pan

For sandwiches with added ingredients:

  1. Apple Muenster – put both pieces of bread in the pan at the same time. Slice apple and add enough to one side of seasoned bread to cover it. Add more Apple Pie Spice to the apple. On the other slice of bread add Muenster cheese. This sandwich tastes best if the apple cooks into the bread and the spices cook into the apple, so cover with a lid and check the darkness of the toasted side of the bread every minute or so. When cheese is melty and desired color/toastiness is achieved, put sandwich together and remove from pan
  2. Jalapeno Pepperjack - After the cheese is melty, add sliced jalapenos, spreading them all over the cheese, add other slice of bread, butter and spice side down onto melting cheese. Brush a small amount of olive oil onto bread and flip over in the pan. When other side is the desired color/toastiness – remove from pan
  3. Tomato Balsamic – After the cheese is melty, add sliced roma tomatoes, spreading them all over the cheese, add desired amount of creamy balsamic dressing then the other slice of bread, butter and spice side down onto melting cheese. Brush a small amount of olive oil onto bread and flip over in the pan. When other side is the desired color/toastiness – remove and eat!
